The Salcombe/Kingsbridge estuary is an area of AONB with miles of blossoming trees and flowering plants for honey bees to pollinate.

The bees forage on hawthorn, blackthorn, and bramble. In the autumn the abundance of Ivy found along all the creeks and inlets provide winter food for the bees to store in the brood boxes.

I bought my first Shoreline honey from a shop in Salcombe. The honey was smooth and very slightly runny. The same honey sent through the post was more crystallised so a little disappointing.

Regarding raw natural honey. I want to assure you that crystallisation is a completely natural process and does not indicate spoilage.
Crystallised honey is perfectly safe to consume and retains its delightful flavour and nutritional benefits. If you prefer it in liquid form, simply warm the jar gently in a water bath to restore its consistency.
In summary, crystallisation is a hallmark of raw honey, showcasing its purity and unprocessed nature.
